Here are some great books from www.theserverside.com:
Ed Roman's "Mastering EJB 2nd edition"
http://www.theserverside.com/books/wiley/masteringEJB/downloadbook.jsp
Floyd Marinescu's "EJB Design Patterns" http://www.theserverside.com/books/wiley/EJBDesignPatterns/downloadbook.jsp
J2EE and XML Development:
http://www.theserverside.com/books/manning/J2EEXML/index.jsp
I've learned EJBs from the first two. The last one I haven't read but you could try it. Good luck with the reading and...
cheers

J2EE is a Suite of various technologies.
Of them, popular ones are Servlets/JSP/EJBs/JMS...
If you are already familiar with Servlets/JSPs, you can start learning EJBs...
Head First EJB by Kathy and Bert, is a good book. You might find this book very interesting. Totally a different way of learning a complex technology like EJB. Unlike the Ed Roman's book, this book is not available online, you may have to buy it..
