Here are some places to start:

java.sun.com's API section - so you can see all the deatils of the latest API's
java.net's news section - see articles and announcements about new technologies
Java Community Process homepage - get involved with the latest specifications being developed.

But realize, no one knows all the java specs (there's tons of new APIs and technologies out there). Learn about ones that you'll use, or that you find you need, or stuff you think sounds cool.

Lastly, I'm moving this to the Intermediate forum, so please continue the discussion there. Thanks!

If you're looking for what's new in Java 2 v5 from previous editions, take a look at the "New Features and Enhancements - J2SE 5.0" document.
