Lemon Pound Cake with Lemon Curd

I have a small Meyer Lemon tree (more like a bush) that I've had for a number of years. Most of the time, I get nothing from it, but this year it produced 4 lemons. They just finished ripening so I figured I'd make something really yummy with them.



So I decided on a Lemon Pound Cake with Lemon Curd.

I started by zesting 2 of the lemons and pulsing it with some sugar in the food processor:



The zested lemons awaiting juicing:



Added the juice, zest and some vanilla to the mix:



And some eggs:



Into a bowl goes the mixture:



Added some cake flour, salt and baking powder.



And into a prepared pan it goes:



While the cake was baking, I made the Lemon Curd. Started by zesting the remaining two lemons:



Does anything smell as lovely as freshly zested lemons?

Other ingredients for the curd: egg yolks, the juice of the lemons, and sugar.



And chilled pats of butter:



The eggs get whisked into the sugar:



Until smooth.



Added the zest and juice:



Whisked until smooth, then onto a pot of hot water for cooking:



About 20 minutes of constant whisking later, nicely thickened:



Removed from heat, and individually whisked in each pat of butter. My arm was ready to fall off. This stuff takes a lot of whisking!



In its container, ready for the fridge:



Cake out of the oven:



And ten minutes later out of the pan:



As soon as it cooled down, a slice with the lemon curd:

Are you in a traditional English phase recently ?
I was about to object that this was not curd but then i found this wikipedia entry. Curd is one of those provisions that many Germans are missing when they live abroad and you can make great dishes and cakes with it.

It very much is. And making it with lemons that were picked 5 minutes before makes it that much better. Meyer lemons are a cross between a true lemon and a mandarin orange and the result is very fragrant and almost floral.

Not consciously. I don't even have any English ancestors that I could be channeling.

Here as well the term "curd" can refer to either of cheese or fruit curd.

Curd is one of those provisions that many Germans are missing when they live abroad and you can make great dishes and cakes with it.


I can post the recipe. It's not all that hard. All you need is a bit of patience and a strong whisking arm. And if you omit the sugar, the same recipe makes Hollandaise Sauce!

This is the second time I've heard of a pound cake in the last few days having never heard the term before (probably because, according to wikipedia, it's known as a sponge cake in Britain).
I was hoping for something a lot more exciting because the first reference to it was in a book where it was being used as a euphemism for sex.

I meant the cheese curd. Is it available in US supermarkets?
Hollandaise is my repertoire. With sugar and lemon zest... hmmm or with orange zest on top of a chocolate... damn i'm too fat

Only in specialty markets. But it's pretty easy to make with some milk and vinegar or lemon juice. Pretty much the same thing as paneer.

hmmm or with orange zest on top of a chocolate

On the other hand, a good pound cake is almost as good as sex!
